Lately, I’ve been getting questions from you guys like, “How do you and your husband afford to take so many vacations?” and the truth is, we haven’t taken a vacation since our Costa Rica trip in April. We, like I’m sure all of you, love to go on vacation. The sea breeze, the bright sun, the cocktails served in your favorite fruit. After our last trip, we decided we would make the effort to live our day-to-day lives feel like vacation. With the long Labor Day weekend ahead of us, today I’ll share one of our favorite ways to channel that vacation feeling from the comfort of home. We’re going to make our very own pineapple cocktails!
There is seriously no better fruit to use as a cocktail glass than a pineapple. Not only is it absolutely delicious, it’s hard exterior means you can keep pouring as many glasses of rum punch in there as you want and it won’t seep through. It also makes for some pretty epic Instagram candy if I do say so myself. 😉
Now I’m sure you’re thinking to yourself, “How do you get the inside of the pineapple cut so perfectly?” This is where I’m about to blow your mind: All you need is one amazing $11 tool from Amazon. This pineapple peeler will change the way you look at pineapple forever. All you have to do is cut the top of the pineapple off, place the peeler in line with the core and start to spin it. Pay attention to make sure you don’t peel all the way through. You want a solid base for your drinky drink to go into. Once you peel to a spot you feel comfortable with, simply slide the peeler out of the pineapple and you will have perfectly cut rounds to eat and enjoy. To complete the job, you’ll need to carefully cut out the core from the base of the pineapple and then voila! Your drinking chalice of vacation-bliss awaits!

For my at-home island cocktail, I mix a blend of coconut rum, orange and pineapple juice, topped with grenadine and your favorite fruits for that ultimate vacation feel… Plus they make great snacks for later.

Hurricane Hermine made landfall yesterday and it’s been raining and howling with wind nonstop here in Tampa. I just wanted to share a quick note that we are safe and fortunate to have woken up to only a few fallen tree limbs in the yard. Growing up in Florida I’ve experienced my fair share of hurricanes and the tornadoes, flooding and potential damage that comes with them. I hope everyone else affected by the storm is also safe and dry. Please be careful out there, everyone!
